Located in Kawasaki City, Kanagawa Prefecture, “Wagyu Shio Motsunabe Sumibi Yakitori Nabekin Shin-Yurigaoka” is a restaurant proud of its wagyu offal hot pot and charcoal-grilled yakitori. Manager Mr. Yamada introduced Respo Self-Order in April 2023. Two months later, at “Yakitori Motsunabe Nabekin Musashi-Kosugi Main Branch” in Musashi-Kosugi, where his younger brother serves as manager, they also decided to introduce not only Respo Self-Order but the Respo reservation ledger as well. This time, we spoke with Mr. Yamada, the owner of both locations, about what prompted him to introduce Respo Self-Order, his impressions after actually using it in the restaurants, and how it has affected store operations, including sales.

Operating two restaurants in Kawasaki City where you can enjoy wagyu beef salt motsu hot pot and authentic charcoal-grilled yakitori

— What inspired you to start your own business?
In my previous job I was a salaried worker at a food-related company, but I had always wanted to have my own shop, so I reached out to my younger brother, who was also interested in the restaurant business, and together we started a restaurant.
When we first opened, there was a period when we operated as a restaurant specializing in individual hot pots, but we now welcome a wide range of guests, from small to large groups, as a place where they can enjoy wagyu beef salt motsu-nabe and charcoal-grilled yakitori.
Please tell us what makes your shop special.
They say it takes years of training to master charcoal-grilled yakitori, including controlling the heat of the charcoal fire and the distance between the skewers and the flames, in order to grill truly delicious yakitori.
I have over 10 years of experience, and my younger brother has nearly 20 years. The yakitori we carefully grill over charcoal is very highly regarded by our customers.
We are particular about our ingredients, using freshly purchased chicken for our yakitori and serving wagyu offal hot pot made with a special original chicken-based broth.
We also offer a wide selection of alcoholic drinks, including over 40 kinds of authentic shochu, carefully selected sake, plum wine, and more.

— What kind of customers usually use your services?
At the Shin-Yurigaoka store, most customers are in their 30s to 60s, and it has a calm, relaxed atmosphere.
At the Musashi-Kosugi store, many customers in their 20s and 30s also visit, and thanks to its location just a one-minute walk from the station, it has a lively, bustling atmosphere.

We began considering implementation due to staff shortages; the low and transparent pricing was the deciding factor.

— What prompted you to introduce Respo Self-Order?
It all started on a day when we were so short-staffed that I had to handle everything by myself, from cooking to serving customers. While I was struggling to figure out how to run the store more efficiently, I heard that a nearby shop had switched to handling all its orders exclusively through mobile ordering.
When I became interested and looked it up on the internet, I found many mobile ordering services, but among them, Respo Self-Order had by far the clearest service details, with low initial costs and transparent pricing.
The good impression I had of the representative when I made an inquiry also helped push us toward adopting it.
— How was the paperwork and other administrative work when you first implemented it?
All I really did was enter the table numbers and menu into Excel for the store and contact the person in charge. They handled almost all of the subsequent implementation work, so it was smooth and hassle-free.

— After introducing Respo Self-Order, did it have any impact on your sales?
Yes. In July and August, some staff couldn’t take shifts because of summer vacations and there were many days I had to run the place alone, but the Respo self-order system really helped and contributed to our sales.
Even on days when we were fully booked, we were able to serve dishes without keeping customers waiting too long, and sales were particularly strong during that period.

--- That’s a wonderful change! How have your customers been reacting to Respo Self-Order?
Many people had already used mobile ordering at other restaurants, so they didn’t feel much discomfort about ordering with their smartphones.
Also, when I was working alone before, some customers hesitated to place orders because they thought I looked busy, but thanks to Respo Self-Order, it seems they now find it easier to order without holding back. I believe that’s one of the factors that led to increased sales.
— How do you usually take orders at your shop?
Many customers still prefer to look at a paper menu, so we hand them a printed menu and let them place their orders using the QR code printed on it.
Some customers are eager to start drinking right away, so I say, “If you’ve already decided on your drink, I can take your order for the first one directly,” and then flexibly handle it by having them place any further orders themselves.

— Finally, could you tell us about your goals for the shop going forward?
We’re aiming to open our third location. Having Respo Self-Order at that time will free us from the pressure of “having to secure more staff,” so it’s very reassuring for us as we work to expand our business.

I would highly recommend it for a wide range of businesses, from small shops like ours to large-scale stores.
Since our shop only has 20 seats and is quite small, I honestly thought at first that even if we introduced it, it wouldn’t really make much of a difference.
However, once we actually implemented it, we were amazed, thinking, “I can’t believe it makes operations this easy and even helps increase sales.” Because of that, I think shops that are larger and have more seats would feel an even greater impact.
Also, because taking orders and doing calculations at checkout has become easier, we can now encourage staff to pay more attention to other tasks such as cleaning up. For that reason, I feel this is a service that benefits store operations in many different ways.
