A reservation ledger that manages bookings from seated to standing customers, enabling efficient store operations (haku)
"haku," located a short distance away from the hustle and bustle of Shibuya Station, is a wine bar where you can enjoy small plates based on natural wine and spices. With a limited number of seats, it offers a calm, intimate atmosphere, and standing drinking is also available.
This time, we spoke with owner Mr. Enomoto and project manager Mr. Sato about what led them to introduce the Respo reservation ledger and how it has affected their store operations.

Opened as a natural wine bar where you can enjoy small spicy dishes
— What inspired you to start your own business?
Enomoto: I’ve always liked wine, and I also enjoyed cooking and serving food, so I wanted to create a place where I could offer drinks and dishes to customers.
Around that time, I met the owner of BUTTER tokyo, a café and bar in Shibuya where you can enjoy shisha while watching a campfire. We decided to launch a new project together, and our shop opened in July 2023.
We operate out of a room in an older building next to “BUTTER tokyo,” offering a cozy, hideaway-like atmosphere.

— Could you tell us about your particular passions when it comes to food and wine?
Mr. Enomoto: Around the world there are distinctive spices, and by using them for aroma or heat, you can enjoy a wide variety of flavors. Likewise, winemakers across the globe produce wines with rich and unique character.
Sensing the common elements between them, and with the cooperation of a spice expert who supervised the dishes, our restaurant offers a selection of small plates, centered around spices, that pair well with wine.
Its appeal lies in the ability to enjoy a wide range of dishes without being bound by any particular genre. For example, they offer various kinds of food such as “Tom Yum Chazuke,” which fuses ethnic and Japanese flavors, and “Shio Koji Harami.”
— What kind of customers usually use your services?
Enomoto: We have customers from a wide range of age groups. My impression is that many of them are around the owner’s age, especially people in their thirties.

Respo Reservation Ledger lets you manage standing-room reservations, with attractive costs and convenience.
— What prompted you to start using the Respo reservation ledger?
Mr. Sato: Our shop operates with 6 seated spots and 4 standing spots, but the reservation service from another company that we used when we first opened couldn’t manage reservations for the standing spots.
Therefore, while considering switching to another company’s service, we decided to introduce the Respo reservation ledger, which was superior in terms of low cost and convenience.
— So, how has it been since you actually introduced it?
Mr. Sato: When a customer makes a reservation, we’ve set things up so that the confirmation email is also sent as a notification to Slack, which helps us manage bookings even more smoothly.
Also, by being able to grasp the number of customers, we can place orders and do prep work only for what’s needed, so I believe this has helped reduce waste.
— Did it affect sales?
Enomoto: Since we’re able to prevent lost opportunities for reservations, I believe it’s contributing to our sales. Also, we usually operate with just one or two staff members, and because we no longer need someone to stay by the phone, I think we’re also saving on labor costs.

— How are you creating a system that leads to online reservations?
Ms. Sato: Our shop’s official Instagram profile includes a link to our official LINE account. From the reservation section within the official LINE, customers are directed to the store page on AutoReserve, where they can make online reservations.
— So that’s a user flow that smoothly leads to online reservations! How about your day-to-day support system?
Mr. Sato: From carefully helping us build our reservation system even before introducing Respo, you’ve been a great support. Even after implementation, whenever we contact you with questions, you respond right away, which has been a big help.
I want to create a warm place where people can feel a sense of “breathing room.”
Please tell us about your thoughts on the shop and your goals for the future.
Enomoto: Our restaurant has the feel of a hidden retreat, and it embodies our wish to create a space where people who usually work busily in the city can forget about time and relax, experiencing a sense of “margin” or breathing room in their lives.
We’ve only been open a short time, but we want to create a beloved place that makes customers want to come back again. To that end, we’re planning to further enhance our food, drinks, and more.
